Cashew Nut Dukkah
10:39 AMI'm a big fan of Dukkah as a nibble - with simple fresh bread, olive oil and balsamic vinegar, it makes for a perfect snack. I decided to try and make it recently - and I was amazed at how easy it was! You can, of course, use any nuts, like almonds, hazlenuts or pistachios. Or perhaps mix it up a bit with some different spices. Another gorgeous little gift when packaged up nicely!
Ingredients
1 cup cashews
1/2 cup sesame seeds
2 tbs ground coriander
2 tbs ground cumin
2 tsp freshly ground black pepper
1 tsp sea salt
Extra virgin olive oil, to serve
Balsamic vinegar, to serve
Crusty bread, to serve
Method
Heat a medium frying pan over medium heat. Add the sesame seeds and cook, stirring, for 1-2 minutes or until golden. Add coriander and cumin and cook for 1 minute.
Crush cashews in a food processor. Transfer to a bowl. Add the crushed spices, pepper and salt and mix well.
Serve dukkah with some extra virgin olive oil, balsamic vinegar and crusty bread.
